Abstract
Conformational properties of tetramethylammonium type gellan gum in aqueous solutions were studied by osmometry. The measurements were carried out at 28°C and 40°C in aqueous solutions of six different tetramethylammonium chloride concentrations (CS, ranging from 0.0125 to 0.5 mol dm−3). It was found that the M̅n values obtained at different CS agreed with each other within the experimental error and the average M̅n value obtained at 28°C ([M̅n](28)) was almost twice the value at 40°C ([M̅n](40)), which suggests association of two molecules. The ionic strength dependence of A2 at 28°C can be quantitatively described by the theory for a charged long rod model, while at 40°C A2 Shows a linear relationship with respect to 1/CS1/2.
